I like my AirPods Pro 2, but I can't say the same for every "smart" feature that Apple has added over the years. If you want to use your AirPods Pro as simply as possible, these are the features to disable.

How I Use My AirPods Pro 2
Personally, I prefer using my AirPods Pro as if they were from 2019. Apple has continuously improved the AirPods Pro over the years, but not all of the new features interest me, even though they are impressive.
I like that my AirPods pause when I take them off, switch between noise reduction and transparency modes, and respond to voice commands when I say "Siri". And that's it.
There is an accessibility feature that is usually activated. By default, the AirPods Pro do not offer noise cancellation when using a single AirPod. I like enabling this ability.
During your use of your AirPods, go to Settings > [Your AirPods] > Accessibility > Enable Noise Reduction with a Single AirPod.
This is useful when I prefer noise cancellation but am using only one AirPod as if lying down in bed. An AirPod in the ear facing the pillow can be uncomfortable sometimes.

Intelligent features you can disable
Some or all of these may be what you're looking for... proceed at your own risk.
- Settings > Sounds and Vibration > Earbuds Security > Disable High Audio Cancellation
Click on the list in settings > [Your AirPods] from first to last... starting with the option to exit adaptive mode.
- HOLD AND KEEP THE AIRPODS: Left > Noise Control > Check Transparency and Noise Reduction; Unselect Adaptive
- HOLD THE HEADPHONES: Right > Noise Control > Select Transparency and Noise Reduction; Unselect Adaptive
Then there are two audio features I don't want to use:
- AUDIO: Disable Custom Audio
- AUDIO: Disable Conversation Awareness
I don't use the Personalized Spatial Audio (or general Spatial Audio).
There are also some of the new features:
- Gestural Switch > Off
- Enable Charging Cable Sounds > Disable
Now that it has been confirmed that I am an unreliable old man who prefers things as they were before (territory), I disable Battery Optimization. However, I leave the Find My Network option enabled.
Finally, there is the recent change in the default value of Disable Listening Mode Off. In reality, I leave it disabled even if the old mode was the opposite. This is because this is a feature that I had previously manually disabled. Every time I use noise cancellation or transparency mode. I believe that the Listening Mode Off is useful only if you are trying to maximize battery life, but the AirPods Pro battery life is not an issue for me.
